Hussaini Tamatar Qoot (tomato chutney)

Very nice, spicy sauce for breads and bhajias.

Ingredients

  • 1 tbsp vegetable oil
  • 3/4 tsp black mustard seeds
  • 1 stalk curry leaves
  • pinch of asafoetida
  • 1 flake garlic, crushed or grated
  • 1 cm ginger, grated
  • 4 green chili peppers, split and with seeds removed
  • 4 medium sized tomatoes, skinned and chopped
  • 1/2 tsp ground turmeric
  • 1 tsp chili powder
  • 2 tsp sugar
  • salt to taste

Preparation

  • heat the oil on a low flame, add mustard seeds, curry leaves and asafoetida and fry for a minute
  • add garlic, ginger and chili peppers, fry a bit until the garlic and ginger become light brown
  • add tomatoes, turmeric and chili powder, fry for 10 minutes until the tomatoes get pulpy, stirring occasionally
  • add sugar and stir until it's dissolved, add salt, serve hot
